Fall is definitely upon us and I’m so happy to say that it is pumpkin season!
I’ve been searching high and low for a great pumpkin muffin recipe, and I have been disappointed time and time again, but not this time!
This is a recipe that I’ve had written on a recipe card forever, but I’ve changed a bunch of stuff and the muffins were sheer perfection. I baked them this morning for breakfast and 9 out of 12 were quickly gobbled up. Our 4 year old even told me that he wanted “just muffins for lunch – nothing else”.
So here is the recipe – it takes about 45 minutes from start to finish.

Perfect Pumpkin Muffins
1½ cup flour
1 tsp baking powder
2 cups pureed pumpkin
¼ cup vegetable oil
2 TBSP apple sauce
2 eggs
2 tsp pumpkin pie spice
¾ cup sugar
½ tsp baking soda
½ tsp salt
Topping
1 TBSP sugar
1 tsp cinnamon
1. Grease muffin tin and preheat oven to 350.
2. Whisk together flour, baking powder, pumpkin pie spice, sugar, baking soda, and salt.
3. Whisk together pumpkin, oil, applesauce, and eggs and then add to the dry ingredients and stir until just combined.
4. Fill muffin tin with batter.
5. Sprinkle with sugar and cinnamon.
6. Bake for 20-30 minutes, until a toothpick inserted comes in clean.
For a bit of extra scrumptiousness, eat them warm with a bit of real butter. Delish!
