Mexican Quiche

Ever had one of those days where the fridge and cupboards are getting close to empty but you need to come up with a meal for your family? Today was that day. I looked in the fridge and there were eggs, onions, and corn on the cob. Not too promising, right?

Wrong! Out of sheer desperation, I sauteed the eggs, cut the corn off the cob and threw it in with the onions, scoured the cupboards and came up with a can of black beans and a jar of salsa. And voila - Mexican Quiche! The verdict? It was delicious - the kids, hubby, AND mother in law loved it.

Mexican Quiche

In a pan on the stove, saute/heat:
1/2 c diced onions
1/2 c corn
3/4 c black beans, drained and rinsed


Put onions, corn, and beans into a greased pie plate.
Add grated cheese, if desired.

In a bowl, mix:
8 eggs
1/2 tsp cumin
1/2 tsp chili powder
salt and pepper

Pour the egg mixture over the veggies in the pie plate.

Bake in the oven at 400 until a knife inserted into the quiche comes out dry.

Cut into wedges and add a dollop of sour cream and salsa if desired.
